Recipe idea of the week:

our mushroom, pepper, sweetcorn and goats cheese pizza

It’s one of the UK’s favourite takeaway treats, but with just a single slice of pizza ranging anywhere from 300-600 calories depending on choice of topping it is sadly one of the most fattening choices on a menu.

Here at ‘Behind the Beauty’ we want to teach you how you can have your favourite pizzas in a much more healthy way. Simply swap the stodgy dough base for a lean chicken breast, increasing your protein intake - the body’s fastest fat burning tool!

And here’s how….

 You will need:

1 x chicken breast
 
1 x tube of tomatoe puree

A selection of your favourite veggie toppings: we’ve gone for mushrooms, sweetcorn and peppers but be as adventurous and as colourful as you like.

30g of cheese. (For a healthier alternative why not try feta or goats cheese which has 5g of fat less than cheddar on average.)

 
Instructions:

Preheat your oven to approx 190c.

Either slice your chicken breast in half horizontally, or beat it out flat with a rolling pin.

Season the chicken and place in the oven for around 15-20mins until cooked through (check with a knife if needed).

Remove chicken from the oven, squeeze on the tomato puree and spread evenly across your chicken base.

Place some of your vegetables on top of the tomato base and then carefully layer your cheese on top of your veg.

For extra crunch use some of your veg on top of your cheese layer.

Cook for another 5/10 mins until cheese has melted.

Serve with a salad garnish.

 
TOP TIP:

Get creative with your veg, the more colourful the better! And next Saturday night when you fancy a pizza reach for a chicken breast not your takeaway menu.
