Recipe of the week:





No, your eyes aren’t deceiving you! This really is a recipe for fat free cake.

This simple but effective fruit loaf is the perfect healthy treat to have with your cup of tea.







You will need:

·         500g of mixed dried fruit.

·         1 egg

·         60g of Self-Raising Flour (For that even healthier alternative, opt for Gluten-Free Flour which can be found at most supermarkets.)

·         1 Tea Bag.


Step-by-Step

1)      Brew the tea bag in a mug for 10 minutes.

2)      Pour the teabag over the fruit, for best results leave to soak overnight.

3)      Crack the egg into the bowl of fruit, along with the flour and mix together.

4)      Place mixture into a loaf tin and cook for approximately 1 hour at 200 degrees.


Guess what?!

If you have opted for gluten-free flour, then you have got yourself a FAT, GLUTEN and SUGAR FREE cake (The only sugar in the mixture is the natural sugar from the fruit.)
